Grilled Farmers Market Antipasto Platter
INGREDIENTS:
2 pounds of seasonal vegetables
Examples: yellow summer squash, whole baby zucchini, whole baby bell
peppers, cherry tomatoes, eggplant
Olive oil for brushing
1 pound of artisanal cheese of choice (for example goat cheese) cut into
bite-sized pieces
1 pound of prosciutto or artisanal salami, sliced very thin
1 pound of brine-cured black olives
Directions:
Prepare hot fire in your grill. Brush vegetables with olive oil,
then season with salt and pepper. Place on baking sheet to take outside.
Grill vegetables 2 to 4 minutes per side, turning once until
vegetables have blistered but are still crisp. Arrange on platter and
surround with cheese, prosciutto and olives. Serves 6 to 8.
