2 cups cooked yellow squash, mashed
3/4 cup Mexican cornbread mix
1 egg (or egg substitute equivalent of 1 egg)
1/2 cup chopped onion
Mix all ingredients well.
Heat 1/4 cup canola oil in skillet to 350 degrees.
Fry patties on each side until brown
