Crispy Oven-Baked Sweet Potato Fries
October’s recipe contest and Southern Farmers Market Cookbook winner, Laura Kelley, says to sprinkle these babies with kosher salt while they’re still hot and then, “chow down!”. Congratulations, Laura!

Southern Farmers Mk Cookbook

Crispy Oven-Baked Sweet Potato Fries      (Serves 4)

Ingredients:

3 large sweet potatoes  -  cut into thick rectangular fry pieces (skin on or off “whatever”)

3 egg whites

Canned olive oil cooking spray

Kosher salt to taste

 

Instructions:  

Preheat oven to 450 degrees.

Whisk the egg whites in a large bowl.

Toss the cut potatoes in the egg whites to coat, shaking off any excess.

Arrange the potatoes in a single layer on a baking sheet.

Spray lightly with the olive oil cooking spray.

Place them in the oven and toss them every 10 minutes until they’re cooked through – roughly 30 minutes total.

Serve hot and freshly salted! .
