Crispy Oven-Baked Sweet Potato Fries
3 large sweet potatoes - cut into thick rectangular
fry pieces (skin on or off “whatever”)
3 egg whites
Canned olive oil cooking spray
Kosher salt to taste
Preheat oven to 450 degrees.
Whisk the egg whites in a large bowl.
Toss the cut potatoes in the egg whites to coat, shaking off any
Arrange the potatoes in a single layer on a baking sheet.
Spray lightly with the olive oil cooking spray.
Place them in the oven and toss them every 10 minutes until they’re
cooked through – roughly 30 minutes total.
Serve hot and freshly salted! .
